You can find many recipes online and you can purchase gluten free cookbooks full of recipes, but we’d like to share some of our favorite gluten free desserts with you here.

Gluten Free Cake Recipes - Chocolate Cake

4 ounces semisweet chocolate pieces
½ cup cocoa powder
¾ cup sugar
½ cup butter, softened (unsalted)
3 eggs
confectioner’s sugar

Melt chocolate pieces and butter in a double boiler. When melted, remove from heat and stir in sugar. Add eggs and whisk well. Then stir in cocoa powder.

Pour batter into an 8-inch round cake pan lined with parchment paper. Bake at 375 degrees for 25 minutes. Allow to cool, then sprinkle with confectioner’s sugar before serving.

Gluten Free Cake Recipes – Yellow Birthday Cake

2 cups gluten free all purpose flour blend
1 cup sugar
4 tablespoons butter, softened
3 eggs
½ cup buttermilk, divided
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon ground flaxseeds
½ teaspoon vanilla
¼ teaspoon almond extract

Separate eggs and beat egg whites until stiff. In another bowl, combine flour, sugar, butter, baking powder, baking soda, and flaxseeds. Mix well. Add ¼ cup buttermilk, vanilla, and almond extract and mix well. Add remaining ¼ cup buttermilk and egg yolks and mix well. Then beat in egg whites.

Pour batter into a lightly greased 9-inch cake pan. Bake at 350 degrees for 25 minutes. Cool, then decorate with gluten free frosting.

Gluten Free Cake Recipes – Angel Food Cake

½ cup white rice flour
¼ cup tapioca flour
¼ cup millet flour
1 ½ cups sugar, divided
12 egg whites
1 tablespoon vanilla
1 ½ teaspoons cream of tartar
1 teaspoon xanthan gum
¼ teaspoon salt

Combine flours, ¾ cup sugar, xanthan gum, and salt in a mixing bowl and mix well. In another bowl, beat egg whites with cream of tartar until soft peaks form. Add remaining ¾ cup sugar, a little at a time, beating until stiff. Add in flour mixture, a little at a time, mixing well. Then add vanilla and mix well.

Pour batter into a lightly greased tube pan. Bake at 235 degrees for 50 – 55 minutes. Serve with sliced strawberries, if desired.
